Dietetic Internship Program Description

The SFA Dietetic Internship program is divided into two components: graduate education and supervised practice at specific approved rotation sites.

GRADUATE EDUCATION: The graduate courses are designed to expand the knowledge base used by a competent, entry-level Registered Dietitian. During the long semesters the didactic classes meet on Monday afternoon or evening only.

Summer

HMS 500 Philosophy of Human Sciences – 3 semester hours. Historical, theoretical, and philosophical investigation of the field of study.

Fall

HMS 531 Supervised Practice for Dietetic Interns – 3 semester hours. Educationally supervised practice under the direct supervision of a Registered Dietitian. Student complete experience in clinical, community and food service. Prerequisite: Admission to SFA Dietetic Internship Program.
HMS 570 Research Methods in Human Sciences – 3 semester hours. In-depth investigation of research procedures in the various areas of the discipline. Prerequisite: HMS 500 or Departmental approval.
HMS 532 Public Health Nutrition – 3 semester hours. Survey of food and nutrition issues ` pertinent to public health and consumerism. Investigation of food and nutrition assistance programs; research and analysis of current policies and goals. Prerequisites: 6 hours in foods/nutrition courses.

Spring

HMS 531 Supervised Practice – 3 semester hours.
HMS 535 Advanced Nutrition in Health and Disease – 3 semester hours. In-depth study of conditions which necessitate dietary modification as part of the therapeutic management of the patient. Prerequisite: 12 hours human sciences including HMS 339 and HMS 449. May be taken concurrently with HMS 449.
HMS 545 Administration and Supervision in Human Sciences – 3 semester hours. Purposes, principles, and procedures of effective administration and supervision, development of plans, procedures and materials.

SUPERVISED PRACTICE:

The supervised practice component is divided into rotations at specifically approved sites, which will afford you the opportunity to achieve the core competencies that have been established by the Commission on Accreditation of Dietetics Education. Days for supervised practice are GENERALLY Tuesday – Friday from 8:00 – 5:00, although days and hours may vary with the facility. Some weekend work may be required. The facility preceptor may require earlier or later times.

The general areas of supervised practice required by the Commission on Accreditation of Dietetics Education are as follows: Clinical, Community, and Foodservice Management. Interns must accrue a minimum of 320 hours of supervised practice in each area. These hours are obtained by the following rotations:

Clinical:

Hospital 8 weeks
Dialysis 2 weeks

Community

TDSHS 4 weeks
WIC 2 weeks
Head Start 2 weeks
Diabetes 2 weeks

Foodservice Management

ARAMARK 4 weeks
Hospital 4 weeks
Public Schools 2 weeks

Additionally you must accrue a minimum of one week of enrichment experience(s) that have been individualized to meet your personal learning needs. You may select from any of the facilities and preceptors on the following list including sites where you have already completed the assigned minimum contact hours or we can work together to get you a unique enrichment that will meet your interests.
